I started my Pi day tradition back in 2017 when I had a snow day at school, but I would say peach pies are perfect for the summer and fall months.
Ingredients
Two pie crusts
¾-1 cup sugar (depends how sweet the peaches are)
4 tablespoons flour
½ teaspoon cinnamon
salt
1 teaspoon vanilla
6 cups of peaches (canned, fresh, or frozen)
2 tablespoons butter
1 egg
Instructions
1. Line a pie plate with pastry.
2. Combine sugar, flour, spice, salt.
3. Add the dry mix to the peaches. Fill shell. Dot with butter.
4. Add top crust. You can get fancy and cut a shape. Crimp the edges. I folded them then went around with a fork.
5. Make an egg wash: 1 egg and 2 tablespoons water. Brush the top crust with the egg wash.
6. Bake in a 400 degree oven for 45-50 minutes.
